For dough

  • 2.5 cups/350 grams of All-purpose flour
  • 1 pinch Salt
  • 1 tsp Baking powder
  • 1/2 cup/100 grams Ghee
  • Water as required
  • Oil or Ghee for frying

For sugar syrup

  • 1 cup of Water
  • 2 cups/400 grams of Sugar
  • 2-3 Cardamom powder
  • Food color (optional)
  • Saffron strands

For garnishing

  • Sliced pistachios or almonds
  • Silver leaf


How to make Balushahi?

Firstly, in a large mixing bowl, combine the 2.5 cups/350 grams of All-purpose flour, 1 pinch of salt, and 1 tsp baking powder.

Then add the 1/2 cup/100 grams ghee and mix well using your fingertips until the mixture resembles coarse crumbs.

After that, add the water as required and mix well until the dough comes together. For a few minutes, knead the dough until it is smooth and pliable.

The dough should be covered and rested for 15 minutes.

Meanwhile, prepare the sugar syrup.

In a saucepan, add 1 cup of water, 2 cups/400 grams sugar, and 2-3 Cardamom powder, and bring to a boil.

Then add the food color (optional) and saffron strands (if using) and let the syrup simmer for 8-10 minutes or until it reaches a sticky consistency.

Turn off the heat and keep the syrup aside.

After 15 minutes, knead the dough again for a few minutes. The dough should then be divided into little, equal-sized balls.

After that, roll each ball between your palms to form a smooth ball, then flatten it slightly with your fingers to give it a disc-like shape.

In a deep frying pan, heat up the oil or ghee over a low flame.
