Ingredients
- 1/2 cup sabudana
- 500 ml milk
- Ghee
- 1/4 cup coconut pieces
- 2 tbsp cashew nuts
- 2 tbsp raisins
- 1 cup jaggery
- 1 tsp cardamom powder
- 3 cups water
How To Make Sabudana Kheer with Jaggery
Start by washing the sabudana to remove excess starch. Then, soak them in enough water to cover them completely for 30 minutes or until they become soft.
Then remove the extra water from the soaked sabudana.
In a heavy-bottomed pan, boil 500 ml milk on low flame. To make sure that the milk does not settle at the bottom of the pan, stir from time to time.
When boiling is started let it boil for 2 more minutes.
Then turn off the gas and keep it aside.
In another pan. heat 1 tbsp of ghee and add 1/4 cup coconut pieces. Roast it until becomes golden brown. Then take it out.
Then add 2 tbsp cashew nuts and 2 tbsp raisins. Roast it.
Now, add 3 cups water, 1/2 tsp ghee, and soaked sabudana. Cook over low flame with continuous stirring.
Cook until sabudana turns transparent.
After that, add boiled milk (should be lukewarm) and 1 tsp cardamom powder. Mix well and let the sabudana boil in milk for 4 to 5 minutes.
Cook on low flame while continuously stirring.
When it is cooked completely, add 1 cup of jaggery and Mix it. Do not over-mix it.
Close the pan with a lid and rest it for 5 minutes.
After 5 minutes, open the lid and mix until jaggery dissolves completely.
Then add roasted nuts and Mix well.
Turn off the flame when you get the perfect consistency. Kheer becomes thick as it cools down.
Your Sabudana Kheer is ready.
