- 50 gram Milk powder
- Ghee
- 200 gram Sugar
- 1/2 cup water
- 1 cup Milk
- Edible silver leaf
What type of Cashew nuts choose?
- If you want to make Kaju Katli, you can take whole cashew nuts or you can also take cashew pieces.
- If your cashews are very dirty, then keep them in hot water for 1 hour, then take them out of the water and keep them dry completely.
- Cashews are clean but many cashews have a peel. We have to remove that too, and if there is a dark sign on some cashew, we will remove that too.
Steps for Kaju Katli recipe :
First of all, we will keep 250 grams of cashew nuts in the freezer for one night. With this, it will be easy to grind cashews and the powder will be very good. After that, take out the cashews from the freezer and grind them.
We do not have to grind cashew nuts in one go. We will grind them intermittently. Then we will filter it and the remaining big pieces. We will grind it again in the same way and filter it again. In this way, we will make cashew powder. We will also mix 50 grams of milk powder in it.
We have taken 250 grams of cashew nuts and 50 grams of milk powder. According to this, we should take 200 grams of sugar. But if you want to make Kaju Katli a little less sweet, you can take 150 grams of sugar or if you want to make it a little sweeter, you can take 250 grams of sugar. The quantity of sugar to be brought is up to you.
Now take a thick base pan and grease its inner side with ghee. This will make it even easier to make Kaju katli.
Now, in a pan, we will take 200 grams of sugar and 1/2 cup of water. There is another measure of this, you have to take so much water that the sugar is completely covered. We have to boil it completely on high flame.
Now you have to check whether the sugar is clean or not. If they are not clean, then you have to clean them by pouring milk into them. If it is clean, then you do not need to add milk, just check its consistency.
Now our sugar syrup is ready, we will remove it from the gas and slowly add cashew powder to it and keep mixing it well. We have to mix them very carefully.
We have to maintain its consistency. If you feel that it is too loose, then you can keep it at the low flame on the gas and maintain its consistency.
You have to keep stirring it continuously and you have to prepare it into a perfect dough.
Now we have to keep this dough in the middle of butter paper and roll it with a rolling pin. You have to roll it so much that we can give it the thickness of Kaju Katli. Now, with the help of a sharp knife, we will cut it into the shape of a Kaju katli.
