Easy & Tasty Veg Diwani Handi Recipe

INGREDIENTS :
- French Beans
- Cauliflower
- Carrot
- Capsicum
- 1/2 bowl peas
- Roasted brown onion
- 1/4 bowl curd
For Curry/Sabji :
- 2 spoon oil
- 1 Bay leaf
- Cinnamon stick
- 1-2 green cardamom
- 1/2 tsp cumin seeds
- 4-5 black pepper
- Ground garlic
- Ground ginger
- Turmeric powder
- Red chili powder
- Coriander powder
- Roasted cumin powder
- 3-4 tomato paste
- 1 glass water
- Dried fenugreek leaves/Kasuri methi
- Salt to taste
- 1/2 tsp sugar
- 2-3 spoons of fresh cream
- Coriander leaves for garnishing
How to make Veg Diwani Handi?
Wash all the vegetables properly and chop them.

First of all, heat 2 tbsp oil in a pan. Then saute French beans in it.

After the French beans are slightly sauteed, add cauliflower and carrot to them and saute them as well.
Now put the tomatoes in a mixer jar and grind them to make a paste. Similarly, put roasted brown onion and 1/4 bowl curd in the mixer jar and make a paste of that too.
Now take 2 tbsp oil in a pan and heat it on a medium flame.

Then put 1 bay leaf, cinnamon stick, 1-2 green cardamom, 1/2 tsp cumin seeds, and 4-5 black pepper in it and saute it.
After that, add Grounded garlic and ginger to it. Mix it and let it cook till it turns slightly brown.
Then put turmeric powder, red chili powder, coriander powder, and roasted cumin powder in it.

After that, add tomato paste. Mix and let it cook. Cover the pan with a lid and cook.

After the tomato paste is cooked properly, add onion paste and cook it in the same way.

After that, add the sauteed French beans, cauliflower, and carrot and mix them.

Then put 1 glass of water in it. Because we have to cook the veggies completely. Cook it by covering the lid of the pan.

When the veggies become a little soft, add chopped capsicum and 1/2 bowl of peas to it and mix it well.
Then put dried fenugreek leaves/Kasuri methi in it. Mix and cook all these completely.
In the end, add salt as per requirement and 1/2 tsp sugar and mix it.

So, Veg Diwani Handi is ready. You can serve it hot, it will be very tasty to eat.
But if you still want to give it a better look and taste, then you put 2-3 spoons of Fresh malai/cream in it. Mix and cook.

These Creamy Veg Diwani Handi are also ready. Garnish it with Coriander leaves.

Tips & Tricks :
- To make Dare Brown Onion, cut the onion, then fry it in oil till it turns brown and dry it completely. Your dried brown onion is ready. You can store it for several days.
- If you want to use fresh onion, then saute it a little and then make a paste and use it.
- You can also make veggies by boiling them instead of sauteing them.
