How To Make Mushroom Do Pyaza
To make Mushroom Do Pyaza, pour water and some vinegar into a bowl and clean the fresh mushrooms thoroughly.
Remove any dirt or debris. Ensure the mushrooms are dry after cleaning, as excess moisture can affect their texture during cooking.
Then cut the mushroom evenly.
Now, heat oil in a pan over medium heat. After that, add the chopped onion and saute it.
After that, add chopped mushrooms into the same oil and saute them.
In a pan, heat 2 tablespoons of oil over medium flame. Once the oil is hot, add 1 tsp cumin seeds and 1 cardamom to the pan. Allow them to splutter for a few seconds until they start to release their aroma.
Then add 1 tbsp grated ginger and 1 finely chopped onion to the pan. Saute the onions until they turn golden brown. This process can take about 4-5 minutes.
Add 1/2 tsp turmeric powder, 1 tsp Kashmiri red chili powder, 1 tsp crushed red chili, 1 tsp coriander powder, 1/2 tsp roasted cumin powder, and 1/2 tsp garam masala. Stir well to coat the onions with the spices.
Then add 2 tbsp curd and combine gently.
After that, Add 2-3 ground tomatoes and salt according to taste. Stir them into the mixture and allow them to cook. This process generally takes five to seven minutes.
Now, add the chopped mushrooms to the pan. Gently mix them with the onion-tomato base, ensuring they are well-coated with the spices.
Then add 1 tbsp dried fenugreek leaves (Kasuri methi) and mix gently.
Cover it and cook the mushrooms on a medium flame for about 5-7 minutes, stirring occasionally. This allows the mushrooms to absorb the flavors and become tender.
If you want a rich taste of the dish you can add 2 tbsp cashew nuts paste and mix it.
Lastly, add chopped onions and water as needed. Mix well and allow the dish to simmer for a few minutes to enhance the taste.
Once the mushrooms are tender and infused with the flavors, turn off the gas.
