INGREDIENTS :
- 2-3 spoons of water
- 2 liter milk
- Some saffron
- 2 pinch baking soda
- 1 bowl of cooked rice
- 1 bowl sugar
- 1 tsp cardamom powder
- Almonds
- Almondette Seeds/Chironji
- Pistachios
- 2 cup saffron milk
How to make Rice Kheer?
Keep the heavy bottom pan on high flame and put 2 to 3 spoons of water and 2 liters of milk in it.
To prevent the milk from sticking to the bottom of the pan, stir occasionally. Bring the milk to a boil.
When the milk starts boiling, then take out the 2 cups of milk in a bowl.
You have to add some saffron to this milk and mix it properly. The kheer will taste incredibly tasty with saffron added.
Now you have to put 2 pinches of baking soda in the milk which is boiling in the pan and mix it.
When the milk boils properly after 2 to 3 minutes, then add cooked rice to it. You have to keep stirring it in between.
Covering the pan with a lid, you have to cook it till the rice and milk get cooked and get the perfect consistency.
Then add 1 bowl of sugar and mix it.
If you want more sweet kheer then you can add more sugar. But we would like to tell you, don’t add too much sugar.
Now add 1 Tsp cardamom powder, almonds, almandite seeds/Chironji and pistachio to it and mix it properly.
When the sugar dissolves in the kheer, after that you have to add the saffron milk you had prepared in it and mix it.
If you want to eat cold kheer, then let it come to a boil and switch off the gas. Then after cooling it in the fridge, you can eat kheer.
But if you want to eat hot kheer, then cook it for 2 to 3 more minutes after boiling.
The Rice kheer is ready, let it cool down at normal temperature and then you can garnish it with some nicely chopped dry fruits.
Tips to make perfect Rice Kheer
- For that aromatic fragrance, Basmati Rice is preferred. Use any aromatic rice variety, long-grained rice, or your regular rice if you don’t have basmati rice.
- For cooked rice, rinse one bowl of Basmati Rice three times. After that, soak the rice for 10 to 15 minutes in enough water. The rice then needs to be boiled.
- You can use any dry fruits in a recipe for Rice Kheer.
- Before putting the nuts in the kheer, you can lightly cook them in ghee. It will provide a distinctive flavor.
