INGREDIENTS :
- 1 Kg Carrot
- 1 Spoon Ghee
- 1 Cup Sugar
- 1/2 Cup Water
- 200 Gram Mawa/Khoya
- 4 – 5 crushed Cardamom
- Dry Fruits For Garnishing
Steps of Gajar ka halwa recipe with khoya :
First of all, take the carrots, wash them well, and peel them.
Then grate all the carrots with the help of a grater.
Note: Buy high-quality carrots from the market for the good texture and taste of halwa
Now put 1 tbsp ghee in a wok and keep it on gas on medium flame. Then put a grated carrot in it and mix it. Keep cooking and keep stirring.
Roast the carrots well in ghee. Check by pressing the carrot with your finger. If the carrot has become a little soft, then remove it from the gas.
Carrots are not to be cooked completely as they are going to be cooked with khoya/mawa further.
With this, we will also make sugar syrup. Put 1 cup sugar and 1/2 cup water in a pan and put it on the gas on a high flame.
When the sugar dissolves well in water, then we put 4-5 crushed cardamom in it. And let’s make syrup well.
When the syrup is well made, then strings will start forming in it. Till then it has to be cooked.
Now with this, we will put khoya/Mawa in the pan and cook/roast it. Keep stirring the khoya and keep cooking.
After a little cooking, remove the khoya/Mawa from the gas.
Now the Gajar/Carrot which we had cooked with ghee, we will again put on the gas on low flame. And to that, we will add sugar syrup and mix it.
After adding sugar syrup, the color of the Halwa will change slightly.
After that, add khoya/mawa and mix it well. Cook it well.
Gajar ka halwa with khoya is ready. You can garnish it with dry fruit. You can take any dry fruits of your choice.
