INGREDIENTS :
For spices/masala
- 1 green cardamom
- 10-15 black pepper
- 1/4 tsp asafoetida/hing powder
- 1/2 tsp garam masala
- 1 tsp dried mango powder
- 1/2 tsp crushed red chili powder
- 1/2 tsp turmeric powder
- 1 tsp Kashmiri red chili powder
- 1/2 tsp roasted cumin powder
- 2 tsp coriander powder
- Salt as per taste
- 2 tbsp roasted peanut
- 1 tbsp fennel seeds
For paste
- 3 chopped tomatoes
- 1-2 green chopped chilies
- 1 small piece of ginger
For sabji
- 300-400 grams round gourd/Tinda
- Oil for frying
- 1 tsp cumin seeds
- 1 tbsp gram flour
- 1 tbsp dried fenugreek leaves
- Coriander leaves
- 1 tbsp fresh cream/malai
- 1 spoon of sugar
- Water as required
How to make Tinde ki sabji?
For making spices
For this, take 1 green cardamom, 10-15 black pepper, 1/4 tsp asafoetida/hing powder, 1/2 tsp garam masala, 1 tsp dried mango powder, 1/2 tsp crushed red chili powder, 1/2 tsp turmeric powder, 1 tsp Kashmiri red chili powder, 1/2 tsp roasted cumin powder, 2 tsp coriander powder, Salt as per taste, 2 tbsp roasted peanut, and 1 tbsp fennel seeds.
Put all these spices in a mixer jar and grind them well to make a fine powder.
Then take out the spices in a bowl and keep it aside.
For making paste
For this, in a mixer jar, put 3 chopped tomatoes, 1-2 green chopped chilies, and 1 small piece of ginger.
Grind them to make a paste. Then keep it aside.
For making Sabji
Wash the round gourds and peel them with a vegetable peeler.
Then cut them into chunks.
Now, Pour oil into a pan and put it on the gas to heat it. Once the oil becomes hot, then put chopped round gourds/Tinde in it and fry them.
Once fried, take them out on a plate and keep them aside.
Take out the excess oil from the pan and put 1 tsp cumin seeds.
Once they start to splutter, add 1 tbsp gram flour and roast until it gets golden in color.
Then add the spice powder that we had prepared and mix it.
Now, add tomato paste. Mix it and cook it.
Then put 1 tbsp dried fenugreek leaves and coriander leaves. Mix well.
Add 1 tbsp fresh cream/malai and mix properly.
After that, add the fried round gourds back to the pan and mix everything together.
Then add 1 spoon of sugar and water as required. Mix it.
Cover the pan and cook on low flame for 5-10 minutes, or until the round gourds are cooked and coated well with the spices.
After that, check the consistency of the gravy. If they are a bit thin, then you can cook them for another 1 to 2 minutes.
Garnish with chopped coriander leaves. Serve hot with roti or rice.
Tips to make perfect Tinde ki sabji
- Choose fresh round gourds that are firm and have smooth skin. Avoid those that have bruises or blemishes as they may not be as flavorful or may have a mushy texture when cooked.
- Be sure to peel the skin off the round gourds before cooking. The skin is tough and may not cook properly, resulting in a tough and chewy texture.
- Cut the round gourds into equal-sized pieces to ensure that they cook evenly. This will also help the dish look more visually appealing.
- Use fresh ingredients such as ginger, garlic, and green chilies to enhance the flavor of the dish. Fresh ingredients add a depth of flavor that cannot be achieved with dried or powdered spices alone.
