This Baingan ka bharta recipe is very different. You must have made brinjal bharta many times in the cooker at home, but we have made it in an earthen vessel/mitti ka bartan. Due to this, the taste of this Brinjal Bharta increases even more.
If you have never cooked food in an earthen vessel, then definitely try it. Because cooking food in an earthen vessel makes the food even tastier and smells different. And many times ago, only earthen vessels were used.

INGREDIENTS :
- Oil For Frying
- 1 Brinjal
- 8-10 Garlic
- 1 Inch Ginger
- 2 Green Chili
- 2 Tomato Paste
- 2 Onion
- Salt to Taste
- Red Chili Powder
- 2 Spoon Coriander Powder
- Some Turmeric Powder
- Oil 1-2 Spoon
- Some Asafoetida/Hing Powder
- Some Cumin Seeds
- Some Dried Fenugreek Leave
- chopped Coriander leaves
Baingan ka bharta recipe step by step :
First of all, take an earthen vessel. If you do not have an earthen vessel/mitti ka bartan, then you can also take a simple utensil.
Take oil into it according to the needed and cut the brinjal and keep it in it for frying.
Here we have cut brinjal into two pieces. If you want, you can also cut it into more pieces. And one more thing, we have taken only one brinjal because its size is big. If you have small brinjals, then take 3 or 4 brinjals.
While the brinjals are frying, we will chop 2 onions, ginger, 2 tomatoes, 8 to 10 garlic and 2 green chilies with the help of a chopper or mixer.
When the brinjal is fried well, take it out and after it cools down a bit, remove its skin.
Now put this brinjal in Mortar Pestle and made brinjal paste. You can also use a simple bowl and use a masher to make the paste.
After that, add chopped onion, ginger, tomato, and green chili and again mash it with the help of a masher.
Now it’s time to add spices. Add salt and red chili powder according needed, 2 spoon coriander powder, and some turmeric powder, and mix it well.
Now take 2 spoons of oil in an earthen vessel. Put some cumin seeds in it and crackle them. After that, add asafoetida/hing powder, chopped garlic and onion, dried fenugreek leaf, and 1 spoon of red chili powder. Mix it well and let it cook.
We have to do all this on the Low flame only.
After that put the brinjal mixture/paste we have prepared in it and mix it well. Then cover it with a lid. And let it cook well.
The Baingan ka Bharta is ready. Garnish it with coriander leaves.
We recommend eating Baingan ka bharta with Bajra chapati. Because eating both of these together gives a very good taste.
Tips & Tricks :
- Instead of frying the brinjal, you can also roast the brinjal.
- You can also use spring onion. They will also enhance the taste of Baingan ka bharta.
