INGREDIENTS :

For Khaman Dhokla :

  • 2 Cup Water
  • 4 Tbsp Sugar
  • 1 Tsp Salt
  • 1 Tsp Lemon juice
  • 1/4 Tsp Turmeric Powder
  • 2 cups/250-gram chickpea flour/Besan
  • 2 Tbsp Oil
  • 2 Tbsp Water
  • 1 Tsp Baking Soda

For Tempering/Tadka :

  • 1-2 Tsp Oil
  • 1/2 Tsp Black Mustard Seeds
  • Some Curry Leaves
  • 4-5 Chopped Green Chilli
  • 1 Cup Water
  • Coriander Leaves For Garnishing

First of all, take a big bowl and add 1 cup of water, 4 tbsp sugar, 1 tsp salt, 1 tsp lemon juice, and 1/4 Tsp turmeric powder in it and mix it properly.

Now put 2 cups/250-gram chickpea flour/besan in it and mix it well. Keep stirring for at least 4 to 5 minutes. After that, we will keep this batter aside for 15 minutes for rest.

Till then, we will grease the tray or something else in which we will make Khaman Dhokla with oil. And put water in the utensils in which we will make Khaman Dhokla and keep it for heating.

Here we have used a pan for cooking Khaman Dhokala. You can also use a pressure cooker and an instant pot.

After 15 minutes, we will put 2 tbsp oil in the batter and mix it while stirring for 5 minutes. After that, add 2 tbsp water and 1 tsp baking soda and mix it.

When we add baking soda to it then the color and texture of the batter will change.

After this, we will immediately pour this batter in the tray and we will keep it in the pan for cooking. We will cover the pan and keep it for 20 to 25 minutes. We have to cover the pan properly, vapor should not come out from anywhere. Otherwise, our Khaman Dhokla will not cook properly.

Check it after 20 to 25 minutes. If it is not cooked, then keep it for some more time. After it is cooked, take it out of the gas carefully.

When the Khaman Dhokla is slightly hot, add half a cup of water to it. Khaman will absorb all the water. And when it cools down, cut it with a knife.

You will be able to see that the Khaman has been made very soft and fluffy as it should be.

Steps for Tempering/Tadka :

For this, we will take 1-2 tsp of oil in a pan. When it gets hot, add 1/2 tsp black mustard seeds, some curry leaves, and 4-5 chopped green chili and crackle them.

Then we will put 1 cup of water in it. And we will cook the water till it boils. So Tempering/Tadka is ready for Khaman Dhokla.

Now, while it is hot, put the tadka/tempering on Khaman dhokla. And on top of that, garnish Khaman Dhokla with Coriander leaves.

Notes

  • Because we have added sugar to the batter, so we will not use sugar in the tempering.
