INGREDIENTS :
For dal
- 1 cup of Toor dal (split pigeon peas)
- 1/2 cup of Chana dal (split Bengal gram)
- 1 chopped onion
- 2-3 green chilies
- 2 cups of water
- 1/2 tsp of turmeric powder
- Salt to taste
For Dalcha
- 2 tbsp of oil
- 1 tsp of mustard seeds
- 1 tsp of cumin seeds
- 1 black cardamom
- 3-4 green cardamom
- 1 Star anise
- 1 stick cinnamon
- 3-4 dried red chili
- 2 bay leaves
- 2 chopped onions
- 2 finely chopped green chilies
- 1 tsp of ginger-garlic paste
- 3 chopped tomatoes
- 1 chopped bottle gourd
- 1 tsp of red chili powder
- 1/2 tsp of Cumin powder
- 1/2 tsp of Coriander powder
- A pinch of asafoetida (Hing)
- 1/2 tsp of garam masala powder
- 2 tbsp shredded coconut
- Water as required
- Salt to taste
- 2 tbsp tamarind pulp
- 1 tsp dried fenugreek leaves
- Coriander leaves for garnishing
Steps for Veg Dalcha recipe :
Firstly, wash and soak the toor dal and chana dal in water for at least 30 minutes.
In a pressure cooker, add the soaked dal, 1 chopped onion, 2-3 green chilies, 1/2 tsp of turmeric powder, 2 cups of water, and salt to taste. Cook for 4-5 whistles or until the dal is cooked well.
Once the pressure is released, mash the dal well and set it aside.
Now in a pan, heat 2 tbsp of oil and 1 tsp of mustard seeds, 1 tsp of cumin seeds, 1 black cardamom, 3-4 green cardamom, 1 star anise, and 1 stick cinnamon.
Then add 3-4 dried red chili and 2 bay leaves. Saute for a few seconds.
After that, add 2 chopped onions and 2 finely chopped green chilies and saute until the onions turn translucent.
Then add 1 tsp of ginger-garlic paste and saute until the raw smell goes away.
Now add 3 chopped tomatoes and cook until they turn mushy.
After that, add 1 chopped bottle gourd and mix well.
Then add 1 tsp of red chili powder, 1/2 tsp of cumin powder, 1/2 tsp of coriander powder, a pinch of asafoetida (hing), and 1/2 tsp of garam masala powder. Mix well.
Add 2 tbsp shredded coconut and mix it properly.
Then add water as per requirement and salt to taste. Cook the vegetables by covering the pan with a lid.
Now add the mashed dal and 2 tbsp tamarind pulp to the cooked vegetables. Mix well and cook it.
Lastly, add 1 tsp dried fenugreek leaves and mix it.
The Veg Dalcha is ready. Garnish with fresh coriander leaves.
Serve the Veg Dalcha hot with steamed rice or roti for a comforting and satisfying meal.
Tips to make perfect Veg Dalcha
- Soaking the dal for 30 minutes ensures that it cooks faster and evenly.
- You can adjust the consistency of the Dalcha by adding more or less water.
- You also use other vegetables like carrots, potatoes, brinjal (eggplant), or drumsticks.
- You can change the amount of spice to suit your taste. If you like it spicy, you can add more red chili powder or green chilies.
- Adding tamarind pulp gives a tangy and sour taste to the Dalcha. Make sure to extract the pulp properly and adjust the quantity as per your taste preference.
- For a richer flavor, you can add a dollop of ghee while serving the Dalcha.
