About Himachali Siddu Recipe
The process involved in the Himachali Siddu recipe is very simple. Start by kneading a soft dough. Shape the dough into small balls, fill them evenly with sweet (jaggery, dry fruits) or savory (potatoes, peas) mixtures, and steam until soft and fluffy.
The best thing about the Siddu dish is its versatility. The choice between sweet and savory fillings provides different flavors to suit various preferences.
Here is a detailed Himachali Siddu recipe with savory fillings using walnuts, onion, chili, coriander, and spices.
Ingredients of Himachali Siddu:
For dough
- 2 cups wheat flour
- 2 tsp dry yeast instant
- 3/4 cup warm water
- 2 tsp ghee
- 2 tsp sugar
- salt to taste
For filling
- 1 cup walnut
- 1 cup coriander leaves
- 3 green chilies
- 10-12 garlic cloves
- 3 tbsp toasted sesame seeds
- 1 tsp salt
- 2 tsp chaat masala
- 2 tsp roasted cumin powder
- 1 chopped onion
How To Make Himachali Siddu
First of all, add 2 tsp dry yeast instant, 2 tsp ghee, 2 tsp sugar, salt to taste, and 3/4 cup warm water. Mix well and keep it aside.
Then put 2 cups of wheat flour in a mixing bowl. Gradually add the yeast mixture and knead into a soft dough.
After that, add ghee and continue to knead until the dough is smooth. Cover and let it rest for one hour.
Now, soak 1 cup of walnut in warm water for 10 minutes.
Then add soaked walnuts, 1 cup coriander leaves, 3 green chilies, 10 to 12 garlic cloves, 3 tbsp toasted sesame seeds, 1 tsp salt, 2 tsp chaat masala, and 2 tsp roasted cumin powder into a mixer jar.
Grind it into a smooth paste and then transfer it into a bowl.
Add 1 chopped onion in a paste and mix well. Keep it aside.
Now, divide the rested dough into balls.
Then flatten each ball into a disc. Place a spoonful of filling on it and seal the edges of the dough properly.
Repeat this procedure for the remaining dough.
After that, apply ghee to the prepared Siddu and steamer plate.
Now, fill the steamer with enough amount of water. The water should not touch the steamer tray to avoid direct contact with the Siddu.
Heat the water over medium heat. Then place the Siddu on the steamer tray. Ensuring they are evenly spaced.
Steam the Siddu for approximately 15 to 20 minutes.
Once steamed to perfection, transfer the Siddu to a plate.
Your Himachali Siddu is ready. Serve it with ghee, curd, or chutney.
