How to Make Tomato Rice?
Begin by rinsing the 1 cup Basmati rice thoroughly under water until the water runs clear.
Then soak the rice in water for about 20 minutes. Drain and set aside.
Now, put 2 chopped tomatoes, 6-8 garlic cloves, 2 ginger pieces, and 2 dry red chili in a mixer jar.
Grind them and make a smooth paste. Keep it aside.
Place your cooker on the stove and turn the heat to medium. Add 2 tbsp oil and heat it.
Then add 1 tsp cumin, 1 bay leaf, 2 cardamom, 1 star anise,4-5 cloves, and 2 sticks of cinnamon. Allow them to splutter and release their flavors. This will take about a minute.
After that, add 1 chopped onion and 2 green chili. Cook until the onion turns translucent and slightly golden.
Then add 4-5 cashew nuts and chopped tomato. Mix well and cook them.
Then add tomato paste and mix well. Close the cooker with a lid and cook for two minutes.
Season the tomato mixture with 1/2 tsp turmeric powder, 1 tsp coriander powder, and 1 tsp red chili powder. Mix them well.
Now, add the soaked and drained rice to the cooker. Mix well.
Then carefully pour in 2 cups of water, coriander leaves, and salt to taste into the cooker. Ensure that the water level is just above the rice. Mix well to combine all the ingredients.
After that, add 1 tbsp ghee and mix properly.
Close the cooker lid and cook for 1 or 2 whistles.
