INGREDIENTS :

  • 12-14 Manicotti shells
  • 2 tbsp Olive Oil
  • 4 cloves of minced Garlic
  • 1 package frozen chopped Spinach
  • 1 container Ricotta Cheese
  • 1.5 cups shredded Mozzarella Cheese
  • 1/2 cup grated Parmesan Cheese
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 jar marinara sauce
  • Fresh Parsley or Basil (optional)

How to make Spinach Manicotti?

First of all, preheat the oven to 375°F (190°C).

Then lightly grease a baking dish with olive oil or cooking spray.

After that, cook the manicotti shells according to the instructions until al dente.

Then drain the shells and rinse them with cold water to stop the cooking process. Keep it aside.

Now heat 1 tbsp of olive oil in a large skillet over medium heat. Then add the minced garlic and cook for 1 to 2 minutes until fragrant.



After that, add the spinach to the skillet and cook for 3 to 4 minutes. Stir it continuously until most of the liquid has evaporated.

Then remove the skillet from the heat and let it cool slightly.

In a large mixing bowl, combine the ricotta cheese, 1 cup shredded mozzarella cheese, 1/2 cup Parmesan cheese, 1/2 tsp salt, and 1/4 tsp black pepper.

Then add the cooked spinach to the cheese mixture and stir until well combined.

Using a small spoon, fill each manicotti shell with the spinach and cheese mixture and place the filled shells in the prepared baking dish.

After that, pour the marinara sauce over the stuffed manicotti shells. Making sure to cover each shell evenly.

Then sprinkle the remaining 1/2 cup of mozzarella cheese over the sauce.

Cover the baking dish with aluminum foil and bake for 25 to 30 minutes, or until the cheese is melted and bubbly.

After that, remove the foil and bake for an additional 5 to 10 minutes until the cheese is golden brown.

Then remove the baking dish from the oven and let it cool for a few minutes.
