1 cup Toor dal
2 cups mixed vegetables (potatoes, carrots, beans, drumsticks)
1 chopped onion
2 chopped tomatoes
2 chopped green chilies
1 tbsp ginger-garlic paste
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp red chili powder
1 tbsp tamarind pulp
Salt to taste

Drain the soaked toor dal and transfer it to a pressure cooker. Add 3 cups of water, turmeric powder, and salt. Pressure cook for 3-4 whistles or until the dal is soft and mushy.

Heat oil in a separate pan. Add mustard seeds and let them splutter. Then add cumin seeds and cook for a few seconds. Add chopped onions and green chilies. Cook them.

Add chopped tomatoes and ginger-garlic paste. Cook until tomatoes are soft and mushy. Then add mixed vegetables and cook for 2-3 minutes.

Once the vegetables are slightly cooked, add the cooked dal to the pan. Mix well. Add red chili powder and salt.

Dilute tamarind pulp in 1/2 cup of water and add it to the dalcha. Mix well and let it simmer for 10-15 minutes on low heat.

Once the dalcha reaches a thick consistency and the vegetables are cooked through, turn off the heat.
