INGREDIENTS

For the Vadas: 1 cup urad dal (black gram lentils) 1/4 cup moong dal (split green gram lentils) 2-3 green chilies (chopped) 1-inch piece of ginger  (grated) A pinch of asafoetida (hing) 1 teaspoon cumin seeds Salt to taste Fresh coriander leaves For Serving: 2 cups thick curd (yogurt) Tamarind chutney Green chutney Chaat masala Finely chopped coriander leaves

Step 1

Wash and soak urad dal and moong dal in separate bowls for about 4-5 hours.

Drain the water and grind the soaked lentils along with chopped green chilies, grated ginger, asafoetida, cumin seeds, and salt to a smooth batter.

Step 3

Heat oil in a deep frying pan. Take small portions of the batter and drop them into the hot oil. Fry on medium flame until they become golden brown.

Step 4

Once fried, remove the vadas from the oil. Take lukewarm water in a bowl and soak the fried vadas for about 15-20 minutes. This will make them soft.

Step 5

Squeeze out the excess water from the soaked vadas and arrange them in a serving dish. Whisk the curd until smooth and pour it over the vadas, covering them completely.

Drizzle tamarind chutney and green chutney over the dahi vadas according to your taste preferences.

Step 7

Sprinkle chaat masala and finely chopped coriander leaves on top. Refrigerate the prepared dahi vadas for at least an hour to chill.
